It’s also very nutritious and especially beneficial for people with high blood sugar. However, its bitter taste can be hard to handle. To reduce bitterness by up to 70%, first wash and then cut the gourd in half lengthwise. Use a metal spoon to scrape out the soft white inner membrane, this part holds most of the bitterness. For further reduction, slice the gourd, sprinkle with salt, rub and rinse for two minutes to remove the green juice, then soak in ice water for 20 minutes. The slices will become crisp and taste almost like cucumber. Choose green, upright bitter gourds with large bumps, they’re usually softer and less bitter than yellow ones. Bitter gourd can be eaten raw or cooked in soups, salads, stir-fries, or steamed dishes.
